
Quartz vs. Granite vs. Quartzite: What Actually Matters
Showroom shorthand makes these three sound interchangeable. They are not — one is factory-made, two are quarried, and they fail in different ways. We fabricate and install all three, so we have no horse in this race.
What each one is
Quartz is engineered: ~90% ground quartz mineral bound in polymer resin, pressed into slabs in a factory. Granite is igneous rock, quarried and polished as-is. Quartzite is sandstone that heat and pressure recrystallized into nearly solid quartz — natural stone with the hardness of the engineered product's namesake mineral.
Heat: granite and quartzite win
Quartzite and granite tolerate hot cookware; quartzite in particular is effectively heat-proof in kitchen use. Quartz's resin binder is the weak link — pans in the 300 F range can scorch or discolor it, and manufacturers exclude heat damage from warranties. If your household will never reliably use trivets, that alone should decide it — we would rather lose the quartz sale than field the scorch-mark call.
Stains and upkeep: quartz wins
Quartz is non-porous and never needs sealing; spilled wine is a paper-towel event. Granite needs resealing roughly yearly (more for light, porous colors), quartzite varies slab-to-slab — some need sealing twice a year, others rarely. None of this is hard, but it is a recurring chore quartz simply does not have.
Scratches: effectively a tie
All three sit around 6-8 on the Mohs scale and resist knives in normal use. Cut on a board anyway — you are protecting your knives as much as the counter.
Etching: read this before buying "quartzite"
True quartzite resists lemon juice and vinegar. But a chunk of what sells under the quartzite label — including some stones marketed as "super white" — is dolomitic marble, which etches like marble and behaves nothing like the quartzite you researched. Protect yourself with the lemon test — juice on a sample for 15 minutes; we will run it in front of you. No mark, real quartzite. Dull spot, it is marble and should be priced as marble.

Within quartz, brand tiers exist, but performance across the major brands is structurally similar — the premium mostly buys pattern design, warranty length, and the name. There is no wrong answer here — all three outlast the mortgage. There are only wrong matches between a surface's habits and yours — our job is to catch those before the saw starts.

What is the difference between quartz, granite and quartzite?
Quartz is engineered — roughly ninety percent ground quartz mineral bound in polymer resin and pressed into slabs. Granite is quarried igneous rock. Quartzite is sandstone recrystallized by heat and pressure. Granite and quartzite tolerate hot cookware; quartz's resin scorches. Ace installs them at $120–150, $140–170 and $150–190 per square foot.

What to keep away from it
- Granite: Vinegar, lemon, ammonia, general bathroom or tub cleaners, abrasive powders — acids dull the polish and strip sealer faster; rust removers with hydrofluoric acid damage even granite
- Granite: Guessing — some dense granites go years without needing sealer, some porous ones need it annually
- Granite: Topical "shine" waxes and dressings that build a film; sealing over a dirty or damp counter

The follow-up questions
Is soapstone too soft for a real working kitchen?
It is genuinely soft — talc-rich stone that a fingernail can mark, the softest countertop you can buy — so it will collect scratches and small dents from daily cooking. What makes it viable anyway is that the damage is shallow and the stone is the same material all the way through: most scratches disappear with a swipe of mineral oil, and deeper ones sand out in minutes. Meanwhile it is heat-proof enough to take pots straight off the burner, completely non-porous, and immune to acids that would etch marble. Homeowners who want a pristine, unchanging surface should pass; homeowners who like a surface that ages like cast iron tend to love it.
What is living with soapstone actually like day to day?
It is the least fussy stone chemically and the most tactile physically. Soapstone is non-porous, so it never needs sealing, and hot pans straight from the stove will not hurt it. But it is soft: it picks up dents and scratches, and most owners oil or wax it — roughly monthly for the first year — to develop an even, dark patina instead of a blotchy one. Scratches sand out with fine-grit paper and a wipe of mineral oil, which is either charming upkeep or an annoyance depending on your temperament. Color range is the other limit: it comes only in grays to near-black, usually with white veining.
Can I set hot pans directly on granite or quartz?
Granite tolerates brief contact with hot cookware better than almost any counter, but repeated heat can degrade the sealer and a very hot pan on a cold slab risks thermal shock — so a trivet is still the smart habit. Quartz is a harder no: its resin binder scorches and can crack from sudden temperature change, and manufacturers explicitly exclude heat damage from their warranties. One trivet by the stove protects a four-figure counter; it is not a hard trade.
Can butcher block work as the main countertop, or only as an island accent?
It can be the whole kitchen if you go in with the right expectations. Wood is the most affordable path to warmth — roughly $35-$120 per square foot installed as of 2026 — but it demands a relationship: regular oiling or a film finish, immediate wiping around the sink so end grain never sits wet, and acceptance that knife marks, dings, and stains become either patina or a weekend sanding project. Many households compromise by putting wood on a low-water zone like an island or baking counter and stone or laminate around the sink, which is exactly where wood counters tend to fail.
Can chips, scratches, and etch marks be repaired, or do I need a new counter?
Repair is real and underused: stone chips fill with color-matched epoxy or UV resin (a $150-$400 service call is typical), granite and marble can be re-polished or re-honed in place, marble etch marks respond to polishing powder on gloss finishes and mostly disappear into honed ones, and butcher block sands back to new. The hard cases: quartz heat scorch (resin damage is usually permanent), laminate (no good repair — damage generally means replacement), and any crack that crosses a sink corner or a seam, which is structural and tends to spread. Rule of thumb: cosmetic damage is repairable; anything that moves, leaks, or grows is not.
Do I need special heat-resistant tile behind the range?
Ordinary ceramic and porcelain tile are fired in a kiln at well over 1,000 degrees - your range cannot hurt them, so no special product is needed for heat. What actually suffers behind a cooktop is everything around the tile: cement grout absorbs grease and discolors, natural stone like marble can etch and darken from splatter and aggressive cleaners, and quartz slab has resin binders that manufacturers protect with required clearances from burners. Choose the tile for looks and cleanability - glossy glazes wipe down easiest - and put the worry into grout choice and sealing instead. A stainless or glass-and-metal mosaic accent behind the range is a style decision, not a safety requirement.
